We're having tacos tonight too!! I love taco night, my boyfriend does the cooking, they're his specialty. So yummy.

Last night I did chicken with dirty rice, and I have to say the chicken turned out perfectly; I used salt, pepper, garlic powder, and a sprinkling of crushed red pepper, then marinated for several hours in teriyaki sauce. I highly recommend it!

I'm sticking with good old lasagna, green salad and garlic toast. I've been doing laundry all day getting the towels washed the dishwasher repair guy used, changing beds and the regular old dirty clothes...ugh! I'm about to go out and finish the digging in the front yard and maybe even stick in a few bulbs if I get time! Have to vacume and some general p/u so guess an easy dinner is a good idea for today!

Could you tell us more about your chicken and how you prepared it? You baked it right? You put the spices on it before you marinate it? Don't the spices just run off in the marinade? How long did you cook it? You know me--I need step by step details or I'm afraid to try it and I sure would love to give this a try!! Thanks.

Hey guys....good news. I just read on the Cheers thread that someone got a card from Elston. He has arrived safely and his dogs did well too. Now I hope he gets his computer up and going and visits us soon here. I miss all of his great ideas!!

OK, this was my method, and the first time I did chicken this particular way, so bear with me : I used boneless skinless chicken tenders (not too big or thick), and first salted and peppered them, then some garlic powder. I put them in a plastic container, poured a generous portion of teriyaki marinade to cover, then sprinkled some crushed red pepper. I let them marinate for about, oh, 3-4 hours. Then I actually cooked them in a skillet, didn't bake them. I can't say the exact amount of time (sorry), pretty much just kept an eye on each tender, then turned them over. I did each side until they were a bit darker than golden brown. They turned out really juicy, I would say just be careful not to overcook or they would have turned out dry.
The red pepper gave a really nice kick!

Stick with the Sloppy Joes Lacey! They sound good....maybe we'll do those instead (I admit, I use Manwhich! The horror.....ha ha ha)

I have no idea what to cook tonight. I have to go shopping so hopefully I'll see something as I browse the isles. (hopefully I'll get a great idea from you folks!!)
