I've had boneless pork chops marinating all day--keeping my fingers crossed because the marinade was kind of an experiment . I will let you all know if it turns out yummy!
Changed my mind, feeling tired today and it is gloomy so we are having frozen pizzas tonight. Really healthy I know but I am so not into cooking today.

I'd say your two best choices are either something that can be made in advance that keeps well like pasta salad, frittata, etc. or something that can be be done start to finish in 30 minutes or less. Door number three would be take-out
Cyn-Bhuna is stir fry, lots of Indian spices. Chapatis is an Indian flat bread served with it. In Indian culture utensils aren't used. Basically you eat w/your hands, bread,etc.
Dinner tonight was boneless chicken marinated in spaghetti sauce, with slices of garlic, cut bell peppers, red and green, chopped baby onions (rareripes as they are called in the northeast) along with spaghetti aglia y oglio topped with asiago cheese and rep pepper flakes. Lest we forget...and sweet tea. This is one of those meals that the Mrs makes without a recipe so she can change it to suit the weather, time of the year and availability of herbs and veggies.. As usual it was delicioso!
Steamed fresh lobster, cherrystone clams steamed then topped w/onion, garlic, celery, tomatoe, wine, and cheese broiled in the oven till cheese melts. French bread, and spagetti just in case(first time for all but bread and spagetti).
Sounds yummy RCC......so it sounds like your wife has adapted to the 'beach kitchen' with no problem! By the way, have you found a condo yet???
