Hi all....got my laptop functioning again We salvaged the home sale by
meeting in the middle. so buyer will pay 3500.00 over appraisal. We will walk
away with 3500.00 less than agreed sales price. Oh well, I just want to be done with this. Steaks on the grill with a few shrimp on the side with baked potato and corn on the cob. Chocolate brownies for desert.

Forgot to mention - had BBQ at aunt's house today. Standard bbq fare, but she also made potato & egg pie. I haven't had that in so many years, and it was so yummy!
Tonight we had Asian take-out for dinner.......Thai spring rolls, coconut shrimp, sesame chicken, and mixed Pad Thai....now I am stuffed and ready for bed!

I haven't made it myself yet, but here's what my aunt told me. Most of what she does is by eye after making it for 40 years, so this will probably take me a few tries before I get it right:
Cut about 6 russet potatoes into small cubes
Dice one onion (yellow?)
Saute the potates & onions in olive oil until tender, and slightly browned.
Add 4-5 beaten eggs. Cook until sides start to come away from pan. Get a plate (preferably larger than than pan) to flip the pie onto. Then put the uncooked side into the pan & continue cooking until desired done-ness (I like it a little overdone). Then flip the pie back out onto a clean plate, blot some of the excess grease, and enjoy.
Location: Lots of sun and palm trees with occasional hurricane :)

That sounds exactly like what we call a Spanish omelette (Spanish as in from Spain - Spaniard I guess).

I've got chicken cutlets marinating in teriyaki sauce. Will probably throw them on the bbq later. What else goes with that? At this point, it's anybody's guess.

Well I can tell you, RICE definately goes with it.......at least in my house! But a big salad would be nice and/or any vegetable like brocolli or green beans; you could put a splash of soy sauce and butter over the vegetable to stay with the asian theme.....! Noodles would also go well with it for the starch.....or of course people always like mashed potatoes.
