To hot to shop so I've raided the cupboards and have come up with a plan. First thing to do is scramble up a small package of ground beef in my favorite iron skillet. As soon as that is done I've got a few red potatoes left I'll chunk up on the small side and add them along with a diced onion. When potatoes are done to suit me I'll stir in a healthy cup of Smokey BBQ sauce. I'll add a few pickled beets to for some color and a side dish of freah garden salad and hope for the best. Don't ask me what it is it just is....
I have been enjoying the tender baby spinach for salads and also steamed...... Last night we had spinach salad with a hot bacon dressing topped with steamed chicken breasts......I just had spinach and chicken on seeded rye for a sandwich.....It was good.
elston would you mind sharing your bacon dressing. I had one but can't find it and I love the hot bacon dressing on my spinach salad.
The "Red Flannel Hash" is history. I thought about a photo but knew better. Camera would have shut down on me. My tummy still says it was yummy. Between the posters here and the new grocery adds out tomorrow it's going to be a wild one. I can feel it coming on.

I don't usually cook from a recipe.......I fried up 4 strips of bacon that I had cut up into little pieces, removed and saved the bacon for the salad. Then I poured off most of the grease leaving about 3 tablespoons maybe 4, then I added about 1/4 cup of balsamic vinegar (I have used regular vinegar and it works too) then I added about 1/4 cup of sugar and a dash of dry mustard....I tasted and added a little more sugar and a little more bacon grease...until it tasted right.....It was wonderful. I let it cool a bit so it was warm...not hot and put it over a mix of spinach and Boston lettuce and topped with sliced chicken and the bacon. We loved it.

Tomato would have been good but didnt have any.
We've had what we called wilted lettuce for years from home grown leaf lettuce. Never occured that spinach leaves would be nice too. Brings back memories of NW MO and the big family garden.
Nomadiscus-My MIL may made potatoes with garden lettuce wilted in bacon grease amd bacon-OMG!!
I can't be tempted any more tonight.Got a bowl of ice cream in my other hand. Now tomorrow I'll have to think about that in the market. They may have a little fresh lettuce and spinach. Just how did she do those potatoes. Cook them first?
