That sounds like an long time for scallops-I've always just dredged in flour and pan sauteed for 4 min each side with sea scallops.

Smile Corn Bread Casserole

The tv Almost Home Made lady has this recipe also or something very much like it. (makes something very like a very moist cornbread and a cheesy spoon bread.

1 box jiffy corn brd mix
1 can creamed corn
1 can drained whole kernal corn
2 large eggs
1 cup sour cream
1/4th cup melted butter
1/4 to 1/2 shredded cheddah cheese

Pre heat oven to 350 degrees

mix jiffy, corn and cream corn eggs, sour cream and melted butter
put in a greased 13x9 inch baking dish

Bake for 30 mins. or until center is firm.
*Take out of oven sprinkle cheese over top
return to oven and bake for 15 more mins.

Can make ahead and return to oven after putting cheese on it for the final 15 mins.

I don't know for sure just cook until the meat is white and not translucent. Your timing sounds right to me in a pre-heated oven. Are you putting them in a buttered dish with some crumbs on top? Maybe a tiny bit of white wine or a little cream to keep them moist?

Default Meat Loaf tip add gelatin

don't have time for a whole meatloaf recipe but I learned a trick and tried it last night and liked it. I whipped my eggs (2 fro 2 lbs of beef) and tomato juice and some water and added sauted onion and celery and chick broth and sprinkled 1/2 teaspoon of unflavored gelatin over the liquid before mixing into the meat withthe spices and crumbs. The Gelatin adds a very nice texture, to the finished product. my recipe was on "Cooks Illustrated-glazed meat loaf or All Beef Meat loaf recipe" I didnt do all the fancy glazing and backing on a rack but the recipe was very very good and the gelatin made a heck of an improvement in my standard--meat loaf.

Elston...thank you so much for that corn bread recipe..my hubbie loves corn bread and cheese bread..he'll love this!

The scallops....I ended up rolling them in melted butter then seasoned bread crumbs with a bit of paprika.
Baked them on 350 for exactly 17 minutes...they were really good.

Going Asian tonight:

MaPo Tofu (Tofu simmered with minced meat, scallions, ginger, and garlic in sweet and spicy sauce) and Sauteed Eggplant with Oyster Sauce over steamed white rice.

They sound yummy! fun talking with you good cooks. It is only 4:07 here on the west coast so a bit early to start cooking. (I miss new england in everyway, everyday!)
