Sliced some potatoes about 1/8" thick and pan fry. They are really an extra thick potato chip that stays moist like a baked potato in the middle. Sub them for a meat item in a sandwich. I coudn't run to the local Burger Burner and back for a Humongo Burger in the 1/2 hour total I may have in to doing it my way

Well, assuming the chicken is defrosted, we'll have the chicken tonight that we didn't have last night. I'm thinking that a little oven roasting might be the way to go. I'm watching calories very carefully for the rest of the week. Friday night, I'll be at one of the my favorite restaurants and it will HOG HEAVEN!

Barbequed baby back ribs (suace on the side), pulled pork, sweet potato with butter and brown sugar, baked beans, sweet tea and chocolate-pretzel-peanut pie!

I'm going to toss another grocery store pizza in the oven tonight. Cooking has not been a favorite activity as of late.

Of course, I'll serve a delicious salad bursting with veggies from my garden alongside. That may ease my guilt some.

We have to change our plans to another fend for ourselves night. Hubby called and is working late, and the kids have Vacation Bible School, so we won't all be together until 9. *sigh* - I was looking forward to the chicken. Oh well....tomorrow!
