That's a great idea, Denise. On previous grocery visits and thinking of new ideas, I've actually explored two possibilities. One is to get the already-made patties (the ones in the grocer's freezer) with the onions already put in, or to get fresh ground beef and mix it with onion soup mix (possibly Lipton) and do something like that. In the future, I'll be torn between those two things. Watch me get both.

Slice down in 3/4" to 1" thick slices. Heat a bit of olive oil in a skillet and sear each side of each medallion (may need to do this in batches, if your skillet won't hold all of them). Remove pork from the pan, if necessary add a bit more oil and saute sliced onions and sliced mushrooms with a clove or two of crushed garlic. Add a cup or so of wine to deglaze the pan, return the medallions to the pan and turn down the heat. Cover and cook for about 10 minutes. Remove the lid and allow the liquid to reduce for another five minutes or so. Serve with your choice of starch (potatoes, noodles, rice or good crusty bread).
That sounds like a plan to me, and a real good one at that!
Okay. The Frontera Grill was excellent. If there are any Rick Bayless fans out there or anyone who wants to have the best Mexican food in the nation, go to this place if you visit Chicago. Be sure to make reservations a few weeks in advance.
Tonight at my dinner table, the feature was pan-grilled pork chops and a veggie medley.
This week at the Case abode, I'll be bringing in some of these selections: grilled chicken, pork tenderloin roast, lasagna, garlic cheese bread (with 3 cheeses), and chicken fried rice. I'm even thinking about a breakfast-for-supper situation, as I plan to make my world-famous (well, kind of....) huevos rancheros. I've got some Pace picante sauce to go with it on the side should I make it.
Hope your week is a good week and enjoy all your good eats. Bon appetit!
I'd love your recipe for huevos rancheros if you care to share!!
It's early here--really early. Got up at 4:30 am thanks to hubby waking me up to make the dog stop barking (like he couldn't do it!)--grrr. I'm anxiously waiting for the sun to rise....Course hubby is happily back to sleep and so is the dog!
I guess a part of Fay is finally going to visit us today so no BBQ for the next ? days. We ended up with pasta last night, fresh sliced cucumbers and fresh sliced tomatoes. It worked! Since I'm already up and going I have plenty of time to figure out dinner for tonight! Ha! But more coffee before I do that!

Defrosting some Chicken Chorizo....hubby will grill that tonight. I am going to put it into a salad... I have a ton of salad fixin's that need to be used up prior to grocery shopping this week. I think I am going to use some corn, black beans, peppers, tomatoes, cukes, red onion, cabbage, broc slaw, garden salad mix, a little bit of bacon, FF Ranch and either BBQ or Hot Sauce... trying to decide which way to go with that.... But that will be dinner... the kids will do hot dogs- as long as hubby is grilling, corn and thier daily need for Broccoli... they can't get enough of the stuff... not complaining...just shocked.
We are entertaining company from CA; so I will be on and off ..... lobsters and corn will definately be on the menu one evening!
