I have some tri-tip pork pieces that I will pound out and bread with panko, after all the buzz on this thread today, I picked up some panko while I was out. Cole slaw tonite and rice and potato.

Default Jaegerschnitzel recipe

4 boneless pork cutlets
flour
panko
salt
pepper
2 eggs/ milk for egg wash
veg oil for frying
pound cutlets thin, sprinkle with salt and pepper, rub in, let sit for 10 minutes. Heat oil to 350F, dredge cutlets in flour, dip in egg wash, dredge in panko. Fry in oil, (make sure the oil is hot) oil should not cover cutlets completely, turn when brown, hold in 200F oven til all cutlets and gravy are cooked.
Gravy
4 oz bacon, diced
1 med onion, diced
8 oz mushrooms, sliced
1 T tomato paste
1/2 c h2o
1/2 c dry white wine
salt
pepper
dash thyme
1t chopped fresh parsley
2 T sour cream
saute bacon and onions until brown, add mushrooms and tomato paste, saute 5 minutes.Add wine, h2o, and seasonings, simmer another 10 minutes, stir in sour cream.
(I was going to offer the recipe for spaetzle, (german dumplings) but they are a real pain if you dont have a spaetzle maker, if you want my recipe, please dm me!)
Serve jaegerschnitzel and gravy with mashed potatoes and sweet and sour red cabbage, I like to use Aunt Nellie's. If you cant get it, dm me, I will share my grandmothers recipe with you.
Note: I usually double the recipes, my family really loves this meal!

Thursday night's dinner will be cream of potato soup and salad - kinda boring but it's cold outside and perfect soup weather

My tonkatsu was a big hit with my DP; but the coleslaw with a commercial dressing (Manzetti or something like that....didnt go over very well.....he is more used to plain shredded cabbage.... and prefers it that way! But the meal certainly rated a 9 on a scale of 10! Panko rules the kitchen!

I wonder if your partner might like a slaw dressing based on vinegar and oil? I have a really great recipe if you think he might like it.....the recipe is "asian".

I have made my own with vinegar and oil and sugar and caroway or celery seeds and sometimes I add a little thinly sliced onion to the slaw.

I have also added a few drops of sesame oil.....in japan at a tonkatsu resturant they bring a little ceramic mortor and pestle to the table and you crush your own sesame seeds to mix with soy sauce to accompany the meal. There is a name for that kind of mortor/ pestle bowl---the bowl has an escoriated roughness in the glaze to grind against--they are usually ceramic and quite pretty.

Default Asian-style coleslaw

2 1/2 c thinly sliced cabbage
1/2 head raddichio, thinly sliced
1 lg carrot, peeled, cut into matchstick-size pieces
3 oz snow peas, thinly sliced lengthwise

4t seasoned rice vinegar
1t dry mustard
1t ground ginger
2T veg oil
1T sesame oil
2t soy sauce

combine 1st 4 ingredients in large bowl. Combine vinegar, mustard and ginger; stir until dissolved. Mix in both oils and soy sauce. pour over slaw, toss to coat.

I sprinkle toasted sesame seeds over the slaw, and refrigerate for at least 2 hours before serving.
