Since most of us are going to be "cooking-fools" today and tomorrow, tonight I've decided the easiest and least messy would be to grill steaks. Besides we want to take advantage of the unusually warm weather and today is suppose to be the last day of that for who knows how long! I'll toss a salad and throw a couple of potatoes on the BBQ with the steaks. Oh yes....everyone out there--HAPPY THANKSGIVING!!!!!

Back to the ole' grind.....turkey is all gone so now what to make "again"?! Think maybe I'm going to try that lentil soup today with sandwiches. It's rainy and foggy and that sounds so good and warming.

Believe it or not, I made eggsalad sandwiches last night!
I was way to tired from work, didn't have an idea on WHAT to make, WASN'T in the mood for anything....so, that's what I came up with. (Yeah, pretty "creative", right? LOL)
Tasted awesome, and it was an incredible fast made meal. LOL.

We made Turkey Stew with left over turkey and some of the veggies from our Thanksgiving vegetable tray, added some potatoes and rolls and we've got a great meal for a cold, rainy day. My DH makes the best stew.

Tonight we had Mexican beef tortas. (Tortas de res) I'm getting real close to posting this Calimex recipe on the recipe board. My wife wrote it out now I just have to find where I put it.

tonite we had curry chicken w/rice & peas and a salad. Leftovers from yesterday's dinner.

tomorrow I think I'll make some vension chili since it is rather nippy outside

I made the lentil soup I saw on another thread here last night. It turned out good but there is sooooo much left. Guess I'll put that in containers and freeze it too. Since it's only my husband and myself now it seems we always have a lot left over. Guess I'm still use to cooking for more. At least many items can be frozen for future dinners, lunches and snacks.
