The following are some simple ideas I fix from time to time:

Chili (using ground beef, canned tomatoes and a mix) served over a baked potato or rice

Hamburger stroganoff (also with ground beef, can of mushroom soup, sour cream, sprinkle of nutmeg) served over rice or noodles.

Tacos (with fixings)

I'll try to think of some more.
All great ideas....think I'm going to try the stroganoff tonight. Thanks.

i make a menu every week. cuts down on the "what's for dinner tonight" stress, and also saves a bundle on groceries. on days i'm in the office, i'll use the crockpot so when my husband comes home, he can grab the kids and have something hot waiting. other days i'll make something. i'm also big on making a huge pot of <whatever> and freezing it (chili, sauce, etc)......

but to answer the question: tonight is easy - good old comfort food - sloppy joes!

Pork chops-breaded with crushed saltines, first dipped in egg, then browned. After browned put them in covered dish-bake 45 min-1 hr. Also baked sweet potatoes, brussel sprouts-sauteed in brown butter and biscuits. Tomorrow-chicken cacciatore-that will also be Sunday's dinner.

This time of year I love to make big pots of soup, spaghetti gravy, chili and freeze leftovers

I forgot to add canned mushrooms in the stroganoff! (Guess that's optional really, but it helps IMO.)
