I am thinking I will make chicken and dumplings tonight, had chili last night.

I have realized the crock pot I bought is too small, as my 13yo son eats like it is going out of style, and if I dont get to the food to get to the 1st helping round, I get to eat frozen bean burritoes...

Tonight...tri tip roast (one in a package that is marinated until I can locate a fresh tri tiip roast), mashed potatoes and asparagus.

For dinner tonight I had some homemade pasta fagioli soup with a slice of buttered bread. It filled me up pretty good since it had a lot of ground beef and beans. Now I'm deciding on what to have for dessert...

As you all know I'm not big on thinking up things for dinner, you've all heard this......here is another time saving idea I do. Last night, as I posted, I had a beef roast (tri tip actually). I don't know about you but I always have left over meat. I slice the left over meat as thin as possible. I take those Ziplock (or anykind of plastic containers) and put enough slices in it for another dinner with plenty of beef gravy to cover it all. Then I freeze each container for another dinner---hot roast beef sandwiches! Just put the meat and gravy in a micro safe dish and warm it up, put out a couple slices of bread with mashed potatoes and a veggie and dinner is ready. Very little clean-up, quick and easy!
Now for tonight?????
