Tonight was boneless duck breast, Spanish rice and broccoli. The boneless duck breast is cool because they are sold in vacuum packed single breast portions. Each breast weighed about .4 lb and cost only $2.50 each. I scored the skin and marinated the breasts in sherry and rosemary. Then I put the breasts skin side down in a pan over med-high heat. A lot of fat is rendered and I will scoop the excess out of the pan as it builds up. Once the skin is brown and crispy, I flip over the breasts, turn the pan down to medium and cook them for ten minutes. That usually makes the meat medium rare.

So a cheap dinner with a gourmet feel. One breast per person is fine. And the broccoli was bought on sale from the sale vegetable rack at the market.

I was a bad girl tonight, just frozen California Pizza Kitchen pizza, and salad. I have been running like a crazy woman, I have a photo shoot tomorrow,( I am gonna be in a book!) so been kinda busy.... will make it up to DH and DD tomorrow. Dont have a clue what I am gonna make, will worry about that tomorrow!

Last night was RDSlots Shepard's Pie-had company and it went over great. I mashed the potatoes w/butter, cream cheese, chives, cream and added frozen pearl onions to meat mxiture. Very good.

Also made a lemon cake from the newest Kraft magazine-it was delicious and if anyone makes it be advised to use a DEEP 9x13 pan and a cookie sheet under it. Tends to mess up your oven-LOL.

Good morning! Since it's Friday, we're not all home together in the evenings, so tonight will be "fend for yourself" - meaning DD will eat nachos and/or pizza at the skating rink, hubby will eat whatever he scrounges up later tonight, and I will cheat and eat some venison summer sausage from all our meat we got from the processers yesterday. YUM!

Finally figured out what I am making

tuna steaks with lemon/thyme sauce
roasted red potatos
veggie-undecided as yet
apple pie for dessert (really wanted lemon tart but need to use up apples)
