We are doing a turkey with stuffing, potato gratin, broccoli, and of course, pumpkin pie (early Thanksgiving dinner with friends) I can't wait!!

It was delicious....as for the leftovers, stuffed turkey sammies and turkey noodle soup. As thanksgiving is my favorite holiday, I am more than happy!

We had roasted cornish game hens stuffed with stove top stuffing that I tweeked by adding chopped onions, canned mushrooms, dried cranberries, and chopped pecans. I also made oven roasted potatoes, broccoli with cheddar cheese sauce, and a salad containing baby greens, chopped fuji apples, a can of mandarin oranges, avocado, cumbled blue cheese, and candied sunflower seeds, tooped off with a fig vinegarette dressing. The great thing about this meal was that it was served at 3:00 p.m. and everyone was so full I didn't make dinner!

I made Caramel Apple pork chops the other night surprised as to how simple and quick it was.

Cook your pork chops until done and place in a warm oven just to keep them warm, take a tart apple slice up and simmer in a cup of brown sugar and 1/4 cup of butter with a pinch of cinnimon, once the apples are tender remove from pan and place with the pork chops and continue to cook the caramel mix until a bit thicker . Place the apple slices over the porkchops drip some of the caramel over the porkchops and apples then sprinkle with peacans. Very good got the receipe from the web.
