Thanks everyone for these great ideas. I get so sick of cooking the same things every few nights. Seeing as I am not feeling well- I think we will order out tonight

Talking Contruction Night!

Try making food fun for the entire family...although mine are grown and it's just me, If I could do it over I would have at least one "Theme Night" a week just to spice it up. For example:

1) Construction Night -
Prepare a varied variety of food that can be creatively constructed by each family member to fit their own tastes. Such as, Pizza or Taco's. Everybody makes and bakes their own....
might sound corny, but I think kids would love it!....(beware though, your 8 year old might just end up enjoying her new peanut an d chocolate chip pizza).

2) Around The World -
Have the kids (perhaps even a tolerate hubby might try this one), dress up in the garb of another country or ethnicity. For example: Everyone design his/her own Latin attire and really dress up the dining room for the occasion. Sometimes it's not WHAT you eat, but how it appears or is received that makes it taste good.
ps...My Grandmother did this when I was 11 - it was African Night...we had African meatloaf...I've never forgiven her for that one...ever had African Meatloaf? It's slimy and green. So just make sure it's something nuetral that everyone would like (even if the like is only slight) - I would probably make a rule that if it's slimy and green, the vote is a definite "NO"!

tonight I cooked some black-eyed peas, mixed in some browned ground beef, butter, tabasco, white pepper, broccoli, onions, garlic, and served it over whole grain rice.

it was pretty good, especially for something made on the fly. if I was doing it over, I'd use steak instead of ground beef, and white rice instead of whole grain.

yeah, wahoo is really good. it's a little bit expensive and hard to find, but it is worth it. I like baking it better than grilling.

the best fish I can think of is fresh yellow-fin tuna, pan-fried in butter, with rosemary and thyme. then just put a dab of sour cream on top, and use it as a dip... mmmmm.

Sadly it will have to be fast-food of some sorts ( probably Burger King or sandwiches from a petrol station) as we're driving up 300 miles and will not have time to stop for real food...

I hear you....we had to do that for 5 days straight driving across country from CA to NC. It got pretty old. But again, there are some pretty good fast food places sometimes. Have a safe trip!!
