I had a best friend in elementary school that came from China. I frequently went over to her home which was kept in the traditional Chinese style. Screened rooms, low tables, mats etc. Her mom was a fantastic cook and I loved eating there. There was a frequent dish she would make as a snack/dessert. She let us watch too. She would heat up what I think was oil in a large wok. She would put these small thin stiff noodles and it would cook for a moment and poof up into giant almost like a cheese puff consistency. It was in pastel colors too.
They are mung bean noodles I think. Any Asian grocery store and a lot of supermarkets carry them. I have only seen them in white though, but pastel colors sound pretty.
Like NJ Sherri said, they are possibly mung bean noodles. I have seen mung bean noodles used to make "nests" by dropping them in oil - they puff-up and get crispy.
Mexican food stores sell Duros - they are often shaped like wagon wheels. They puff-up and taste like pork rinds when you fry them.
They were pastel colors as I remember the pale pink, green and blue. And the texture is very much like a corn puff. I have to see if the mung bean noodles are it.
I love shrimp chips! I had no idea that they came in an uncooked form. I'm used to getting them already cooked from the snack foods aisle in the Asian grocery stores around town.
