Looks like the leftovers from the Sunday leftovers will be combined with the Monday night leftovers for a who knows what to call it. Maybe Tuesday Pandemonium.
We are having veggie enchiladas, guacamole salad and refried beans. We try to do a veggie day once a week but I have to admit I have been slipping lately.
For dinner my family had left over Tacos and veggies.
Every once in a while I have an all vegetable and fruit day. Today I had sauteed mixed greens - mustard, cabbage and collard greens, with lemon juice, garlic and herbs.
Also some more summer squash with peppers.
Desert was fresh strawberries. I do this a few days out of the month. I feel light and clean the next day and it honestly tastes good and fills me up.
Salad with oil and vinegar. I hate how much I have to travel for my job. It's not always easy to find real vegan food. This salad is my only meal other than a pretzel in the last 42 hours. 4 more days and then I can make real food at home.
Tonight we have something easy,yet delicious. Wholewheat pasta and a mean spicy Italian pasta sauce. Served with it my own baked dinner buns with garlic spread. A mixed green salad sounds nice . Usually we would have a fine Vino with it,but being a work week we will just have sour lemon/lime Perrier water with a lemon/lime wedge for decoration. For dessert Mango slices for we got them on a big sale past weekend
Anchovy pasta carbonara with a side of steamed broccoli and Ben & Jerry's icecream.
