My DD is coming for a short visit so I make her favorite..a roast rubbed in salt,pepper and Dijon and browned from all sides in olive oil ,adding a Spanish sweet onion and cook all til tender,with a dark home made mushroom sauce. Garlic mashed potatoes and baby carrots with fresh tarragon sprinkled. With that we will have a glass of wine. For dessert her favorite, Mom's Strawberry Parfait

If the chief chef approves I think we will have a Great Depression reenactment with fried potato sandwiches.

Last night was lazy night and found some frozen breaded eggplant slices leftover from another dinner. I layered provolone piccante and some red wine tomato sauce I had. Then grated pecorino all over and roasted till bubbly and ooey. Tonight will be cuban night due to some talks I had about it. Palomilla piled high with parsley onions with rice and beans. Avocado salad to round it out.
