Got a Boston butt in the crock pot now so we'll have BBQ with cole slaw on buns, sweet potato fries, decaf iced tea and a Pepperidge Farms layer cake on sale this week.

My husband's partner and his wife are coming over for dinner so I wanted to make something easy when I get home and "put on the dog" at the same time. I made the dessert last night. We are having: baked chicken breasts stuffed with pesto and cheese, pasta with bacon, mini spinach quiches and raspberry cheesecake bars.

Making a "light" vegetable lasagna with thinly sliced eggplants instead of noodles. Baking the eggplant and coating it with panko bread crumbs first.

Using a light home made tomato sauce and low fat cottage cheese.

For desert? Anniversary Cake! We have been married for 28 years today! Going out to dinner tomorrow - kid's treat.

Dill and Havarti wild Alaskan salmon croquettes, steamed red potatoes with dill and garlic slivers with steamed garden fresh broccoli and baby carrots.

I haven't had chicken and dumplings in ages. I should remember to prepare some this upcoming winter. Good comfort food!
