Sweet potato pirogi, sauteed with minced caramelized Vidalia onions, sweet n sour red cabbage, veggie kielbasi with peppers and onions, and easy cherry cobbler for desert.

Also Ohio Elderberry wine, vodka and assorted pickles. Sweet tea for kids.

we didn't have our scalloped potatoes last night, I was too tired to bother, so we just took out a couple of pieces of frozen fish, had a small salad and some stove top stuffing. I wanted to have the scalloped potatoes tonight but now, I remember I have some Veal defrosted. So guess I will do something with it. The spoiled brat will be excited, he loves Veal. I haven't even had it for maybe, 25 years. I guess I will make Scallopini (spelling).

Chicken thighs for hubby, we will both have Tater tots and a mix of cauliflower, carrot and Broccoli. Not sure if I will eat meat tonight. I am so tired of chicken but our weekly food budget has decreased and I only spend $80.00 a week now and chicken is cheaper than red meat and pork these days.

I've been baking all day, so I don't hold out much hope for cooking dinner. Steak on the grill or pasta salad, maybe.

Tonight veggie Tacos, in whole wheat taco shells, garnished with your choice of black and green olives, minced red onions, home made guacamole, shredded lettuce and diced tomatoes. Sweet locally grown organic corn, and a cucumber salad. Left over berry cobbler for desert.
