Chili is the quickest meal you can make? What do you do? Open a can? And baking cornbread takes a half an hour at least, not including mixing it up.

I agree. Chili is an all day dish. I preheat my cast iron skillet for cornbread at least 20 minutes before baking the cornbread.

Korean-ish Stir Fry
I live right beside a Korean grocery store - so, so cheap! - and so my tastes have begun to skew towards the stuff I buy there. In five minutes I can boil udon noodles and, with a steamer over the same water, wilt bok choy, mushrooms and zuchinni. Throw on some Srirachi sauce and soy sauce and you're done!

Boil pasta, drain, stir in butter/olive oil, grated cheese, garlic powder. Add a small can of veggies and/or mushrooms if you have such. Top with grated or shaker black pepper. Was my go to cheap and fast meal when single like 2-3 times a week. I still make it occasionally.
