I've been on a Ken's Honey Mustard kick lately. I only use a very small amount and mix it with water to get more out of it. Yes, that makes it runny, but I like it for the flavor not necessarily the consistency.
I add water to Ken's Buttermilk Ranch. It's way too thick otherwise.
Do you have any recipes for tahini-based dressings?

I loved the one I made with parsley garlic and lemon juice. Thin with some water. Really good! Earlier this week I did lime soy sauce and a touch of honey. Japanese inspired.
