I really lie St. Louis BBQ ribs and also Memphis ribs. In October we're going to the Biloxi area and we plan to visit The Shed which is in Ocean Springs - it has national acclaim. I've heard they have some of the best BBQ in the nation. I'll let you know after I taste theirs, if it's as good as they say.
I don't have a strong preference to style - each has its appeal. And I hate dogma. So I'd like a BBQ scene where all regional favorites are available, Memphis/Carolinas/KC/etc., any kind of meat goes, and it's executed relatively well.
So I'm gonna say Pittsburgh. With Union Pig & Chicken as the best example of BBQ "fusion" of different styles.
I was brought up on Carolinas cue... will always respect it. Will always be tasty ... but I'll be damned if the Memphis, texas and Stl. bbq doesn't get my mouth watering like nothing else... and that's just from viewing photos and videos.
I will be taking trips to try them all soon, and come back with my findings.
I'm objective. And if it's better than my Carolinas style, I will acknowledge it. Maybe not too loudly, tho.
