I don't use it but am interested in trying depending on what it is used for. I assume a person doesn't it eat raw but on something. What do you use it on?

I LOVE horseradish!

If you get the fresh whole root horseradish and grate it - it can be very hot. That is my favorite. If you buy horseradish at the grocery store (in a bottle) it will lose its potency fairly quickly.

I mix it with ketchup and a little lemon juice to dip steamed or boiled shrimp and it is great mixed with mayonnaise on roast beef (or any beef). Also love mayo and horseradish for dipping fried mozzarella. YUM!

Straight grated horseradish goes great on a roast beef sandwich. I also have a great baked mac and cheese that incorporates prepared horseradish.

I use fresh grated horseradish in my mashed potatoes.

Whipped fresh horseradish is really good on sandwiches.

I don't care for prepared horseradish as it isn't very potent.

McDonalds honey mustard sauce has a hint of HR in it. Really perks up the flavor.

Horseradish (usually mixed with some sour cream, mayo, or whipped heavy cream) is a natural with any kind of roast beef.

Another Lover of fresh horseradish.
The prepared sauces using it are too tame. I grow it, and use it fresh, grated; as another poster mentioned.
I don't know how many know this, (probably a lot in this forum) but true Wasabi---is directly related to horseradish, and even more potent than it's cousin. I love it too.
If you ever need to clear your sinuses, bite a corner of some horseradish root. It will wake you up straight away.

I've grown horseradish. It's invasive and ugly.

But I love to dip bites of pork in it. Braised ribs, slow cooked, then each bite dipped into horseradish is wonderful.

Creamy horseradish is horrible. I buy Kraft in a little squatty bottle. It says "prepared" and "cream style", but it's not like the weak creamy stuff most bottled horseradish is. It's kinda chunky. Just right for flavor. Not too potent.

I mix a large spoonful in potato salad. You know it's there but you can't quite figure out what it is. Everyone raves about my potato salad.

Yeah, good horseradish clears your sinuses, but it all runs out your eyes.
