I was going to make pork fried rice but didn't have eggs or broccoli so I cut my lonely little pork chop into as many tiny pieces as I could. I sauteed a 1/4 onion and l/4 red pepper (both left over) in evoo then added a partially cooked bag of steamed veggies including corn, peas, carrots, green beans and the jucie my pork chop cooked in (soy sauce, lea and perrins and brown sugar), put in my pork chop and let that get hot then served it over rice. And dang if I didn't have leftovers even from that. Everybody loved it but had to get off to afternoon camp in a hurry. So now I have a single lunch for somebody this weekend.

Normally I wouldn't serve corn and rice together but this one time it didn't do much harm.

Sounds good! I have a little bit of left over pork tenderloin from last night along with some peas. I think I'll turn it into fried rice.

A little meat can go a long way! For some people if they can just see some meat, that satisfies that carnivorous appetite.
