most all beef is fed grass ,,,but not grass fed

Lobster & tomato omelets

Every once in a while frozen 4oz lobster tails are on sale for half-price at the local grocery store - I'll typically buy one, as I did a couple weeks ago. Yesterday, I bought some nice heirloom tomatoes at the local co-op. I boiled the lobster tail and then chopped it and sliced up a tomato. That's it, nothing fancy. I added a little shredded cheese to the omelets as they cooked (just some Monterrey Jack I happen to have on hand). There's not a lot of lobster meat but more than enough to impart that pleasant lobster taste, and it goes wonderfully with the tomato.
