It's been great having everyone bring over meals for DH's recovery..... but.... as is typical with our area, heaving on the meat, rice and dessert. Plus, last night we had a BBQ, so chicken, a Mediterranean quinoa salad ( alot of WHAT is this?! But good reviews ), and grilled veggies.
Tonight I'm stuffing grilled green chilis with corn, black beans, onions, spices and topping it with mozzarella, recycling the grilled veggies into a salad, and the rest of the refried beans.
I can't get enough produce right now.

Garden fresh baby carrots and broccoli stems in a brown sugar and balsamic vinaigrette reduction. Leftover red potatoes in a garlic and basil sauce. Cajun-rubbed sirloin pan-seared to medium.
This will be the first time preparing the veggies in this fashion - it will be interesting. Broccoli stems are delicious once the outer fibrous layer is removed.
I enjoyed a basil, garlic, lemon and caper sauce served over poached Alaskan cod last night - it was absolutely delicious.
