My homemade vegetable stock will pay double duty tonight:

A very hearty serving of garden fresh broccoli steamed.
Poached Alaskan cod topped with a lemon, parsley and caper sauce.

I have some leftover apple pastry so I may heat that up in the microwave (I love warmed pastry).

We have a church gals meeting tonight and a salad pot luck, so I made a chicken pasta salad. For the spoiled brat I took some spaghetti out of the freezer and will leave him a green salad.

Last night was ranch meatloaf with mashed potatoes and green beans. Family declared the ranch flavor is their new favorite way of having the meatloaf. lol

Tonight will be grilled blackened fish if they have a suitable fish. If not, will probably do fish en papillote on the grill as well. Too hot to turn on the oven! Alongside will serve potatos gratin and a veggies. If en papillote, the veggies/potatoes will be sliced paper thin and cooked as a one "pot" meal.
