Making a chickpeas salad for lunch using these ingredients
chickpeas drained from a tin
peanut oil
mustard seeds
cumin seeds
fennel seeds
red pepper
plain yogurt
lemon juice
green onions
cilantro
mint
salt to taste
2 small toasted stone ground whole wheat bread sandwiches with chunk light tuna & non-fat mayonnaise, a Fiber One oats & chocolate chewy bar and a large glass of cranberry juice.
I made this today for a sick kid that is home from school. It was a hit. A good, kid-friendly sandwich.
1. Mix about 1 ounce/1 TBSP of softened cream cheese with about 1/2 tsp of honey and a bit of cinnamon. Stir to combine. Spread mixture thinly on 2 pieces of bread (recipe called for Cinnamon raisin bread, but I used regular and sprinkled cinnamon on top).
2. Cut a granny smith (or other tart apple) into thin slices and place some onto bread slathered with cream cheese. Assemble sandwich.
3. Grill in pan or use panini/sandwich press.
4. Cut into triangles and serve with a tiny bit of warm caramel sauce. Obviously, you could skip this part.
You could also probably add a protein like turkey. Anyway, I thought it was great.
