In what section of the store do you find pimentos? With the olives, maybe? I have never bought them before. What the heck is a pimento anyway?

I just saw the Pioneer Woman's recipe for pimento cheese and I'm thinking of making it without the Chipotle pepper.

Pimientos are a type of red chile pepper. The ones you buy in a jar are a sweet variety which is peeled and cut in tiny strips. And yes, with the olives.

Saw them at my store about an hour ago - mine were more over by the canned/jarred mushrooms, marinated artichoke hearts - stuff like that. I will admit that my store does have a somewhat strange layout - school supplies (I needed a notebook for work) are for some reason in an aisle between incontinence supplies and pet food. I have no idea where the rhyme nor reason is there.

I want to warn you that adding pimientos adds no flavor at all to any dish. They do add a zing of bright red color, but they are squishy, flavorless blobs of squelch.

I was never a fan of pimento, but when making pimento cheese I think it's a must. I plan to cut down the called for amount at least by half.

I have never had it, but the homemade version sounds yummy. Grated cheddar, grated jack, cream cheese, some mayo, pimento, fresh dill, black pepper, and dijon mustard.

Pimento cheese is incredible! I always knew about it but never tried until last spring. So glad I did!
