Besides the nutritional difference of skins vs. without skins is the flavor and texture profiles of the different types of potatoes.

It's not the number as much as the %. 33.33% of the protein is lost. Some variances don't make sense as do the ones that are higher for peeling before. I question if either the original data entry is right or the process is right. Skins left on seem to protect the Vitamin C levels also.
^^^ I sacrifice the small loss by not getting all the pesticides.
Not much loss by boiling them, and the Vit. C I will get by eating something else, or drinking O.J.
Food should compliment each other...
I've read in Consumer Reports that there are no insecticides on underground grown produce and that there's no point in buying them grown organically.
Potatoes get sprayed with a chemical that keeps them from sprouting unless you buy organic and then I wonder.....The tops are killed off with another herbicide so that the mechanical harvester can dig them. It is a battle to get them out of the ground before rains set in.
