LOVE beets!!! Period!
Solo or in salads, pickled beets, beet soup, cooked, roasted, baked, creamed, grated, sauteed, cold, warm, beets with horseradish, beets with herring, beets with potato salad, cold beet soup, beet juice, beet smoothies... I probably know few dozen recipes for beets!!!
Used to love them when I wasn't suppose to eat them due to being allergic to practically everything under the sun but now that I no longer have my allergy they aren't as fun to eat
