Wow - so many choices!! I never expected this many responses. At least all the next time I have eggs - I can refer to this thread for new ways and make my decision on which one is truly my favorite!

Wife brought eggs home from the Farmers' Market today - some are brown, some are light green, and some are light blue - none are white. The yolks are a deep orange and they taste great sunny-side up.

Today I made 'em over-easy and threw them into a couple tortillas along with fried 'shrooms and onions, grated cheese and generous dashes of Chipotle Tabasco. I warmed the tortillas in the pan first then assembled and rolled them, browning in the pan until the cheese was melted through. Not the worst breakfast ever.

Also on Sunday night I'll often make a breakfast casserole in which a few eggs are normally involved. This serves us for the whole week and just has to be nuked in the morning. Anything to save time/labor.

We have our own chickens too. All the eggs are brown but different shapes and sizes, and the yolks are a deep golden orange. SO yummy. Once you have fresh eggs it's hard to eat store-bought again.
