HMMM....does the paper bag cut down on the cooking time and the basting too?
I've heard only that it makes the skin crispy

My mom likes to use little turkey bath bags to make a greenhouse effect, to keep her bird from drying out... this year I'm trying to convince her into letting me handle it. I baby my turkeys with a garlicbutter and honey gravy that it stews in, every 2 hours or so I pull it out, syringe the juice, and inject it back into the turkey all over, and then baste the entire thing before sticking it back in. You do this enough, (yeah it's a pain but it's soo worth it to me) it always comes out so good

Not sure exactly what the bag really does, but we just do it ! The turkey always comes out good. My wife and I were robbed in the lobby of a hotel Saturday so we will go to a free dinner this year. Maybe we'll just get a broasted chicken instead and just be thankfull we only lost our money rather than something more precious !

Sorry to hear about the robbery rickers, you are right, it could always be worse! And free dinner to boot!

Question for you turkeyheads though... this is one I've never conquered before on my own. The little metal wire bracket that holds the legs "shut" when you buy the bird... they always try to fall off and come apart when I'm cleaning the turkey and bathing it etc before it goes in the oven.

Do you leave it on throughout the roast? Or is the metal bracket SUPPOSED to come off before you start cooking it?

I only tie the beak closed as The screaming gobble gobble noises coming from the oven is a bit disturbing ! Ha Ha Ha, Gulp ! sorry bout the bad joke !
