Is there any realistic way of doing this without access to raw unpasteurized milk? I'd like to get into trying to make cheese from scratch but the raw milk appears to be a cornerstone of the process. Anyone find any workarounds?

You can make cheese from pasteurized milk - just make sure it isn't ultra-pasteurized (higher temperature pasteurization).

For me, the cheese firms up better with raw milk, but when I'm too lazy to drive to the farm I use pasteurized.
