I've been assigned to bring the side dishes for a Greek themed dinner. Of course, the obvious choice would be a rice or roast potato and I might do one of those, too. But I'd like to bring a vegetable side as well.
Salad is out (somebody else has that), and it's a pot luck thingy, so cooking has to be pretty much done before we get there.
I'm kinda stumped on the vegie idea. Thought about fava beans, but ever since Silence of the Lambs, I just can't deal with them (plus they would be bloody expensive for 16 people!) Suggestions, please?
8 ounces Rotini pasta
1/4 cup olive oil
1/2 cup red wine vinegar
1 1/2 tsp garlic powder
1 1/2 tsp dried basil leaves
1 1/2 tsp dried oregano
3 cups sliced mushrooms
14 -16 halved cherry tomatoes
3/4 cup crumbled feta cheese
1/2 cup chopped green onions
4 ounce pitted chopped black olives
*Fresh herbs will make it even more tasty*
Crockpot dishes are ideal for potlucks. How about Crockpot Greek stuffed peppers? This is a no-meat dish with Feta cheese and Couscous so it should pair well with the potluck meats.
If you make them from scratch, remember to use the fresh garbanzo beans because they fall apart if you try to use the canned.
Tabouleh is also very good. It tastes better the next day, too, so it would be an easy dish to make ahead.
I've never made hummus, but my daughter does. i'm curious, what difference would it make if the beans "fall apart"? Don't you smash them anyway? I 'm pretty sure she makes her's in her kitchen ninja.

I think they were referring to the falafel falling apart, not the hummus (both are made with chickpeas).
Baba ganoush is also a great option -- roasted eggplant dip. Properly done, I almost prefer it over hummus.
I also really love Skinnytaste's spinach and feta pie -- it's a spin-off of spanakopita (which I also love), but it's far less time consuming. Easy Crust-less Spinach and Feta Pie | Skinnytaste The only change I make is to use dried oregano instead of fresh dill, but that's a taste preference.

For the falafels, which are little patties that are fried, if you use canned chickpeas/garbanzo beans the falafel patties don't stay together. They kind of fall apart and get gross. I think some people do use canned, but it just doesn't turn out very good IMO.
For the hummus, it doesn't matter so much, canned is fine.
I also say Babaganoush would be a great vegetable option for a Greek themed meal.
