Personally I would toss it. Did you open it? When it is bad it will obviously separate as you mentioned with your jar. If you cook it and the sauce is hot,there could be foam and a very strong yeasty smell.Whatever you decide to do,taste it with a spoon instead with your finger due to bad bacteria.
OP, I would not assume it is bad. I suggest that you contact the manufacturer and ask them.
Because Alfredo is oily, it is not all that rare for it to separate a little bit. However, I am not familiar with that product from that company. It's in a jar, yes? Is the pressure button on top in good shape? When you twist off the lid does it come off reluctantly with a good loud pop? If so, it should be OK to eat.
However, please contact the company and ask what they recommend.

If you mean an unopened jar has separated, it's normal and nothing to worry about. I see that kind of separation in all kinds of sauces that have sat undisturbed for a long time, sometimes even in the store. Maybe you just never noticed it before?
If you mean a jar of tomato based sauce that you already opened, which has been refrigerated, it's good for 5-10 days, then toss it.
Also, the date on a jar is not an expiration date, it's a "Best by" date, and even conservative guides will tell you that unopened and stored in a dark cabinet, it should taste fine even a year past that date. The date on the package is all about quality, not safety.
