Yes it is an interesting post... about how many teeth the vegetarian has left.
I've been a vegetarian (not a vegan) for close to 20 years and the number of new fillings I've had I can count in one hand. Now the old fillings that I had from my pre-vegetarian, meat-eating days are many. These days, some of those old fillings are starting to go and in need of being replaced. But as far as brand new cavities..... a rare thing.
I think I would probably attribute those cavities back then to sugar consumption (candy, etc.)
I would add a dish that could be their "main." If you don't want to offer some tofurky (which is a great option), maybe come up with a dish that has tofu in it. I crispy tofu think that's more acceptable to non-vegetarians.
While the vegetables probably are sufficient, adding a protein would make it a more complete meal.
Everything except the turkey and gravy - stuffing, cranberry sauce, mashed potatoes, sweet potato casserole, green bean casserole, green salad, dinner rolls and butter, pies, fruit salad, punch, iced tea, pop, etc.

Making tofurkey or a special tofu dish would be going out of the way to create something special for that person. Not that there's anything wrong with that, but I don't think that was the intent of the OP.
Homemade green bean casserole. It is NOT the dump out of a can version! I make an herb cheese, add mushrooms (fresh!, and a mixture), and almonds. Top with home made onion rings that are dipped in a buttermilk batter.
Winter squash of some type.
If I have enough advance notice, I will make them a chic pea dish from India that always gets rave reviews. It, too, is made from scratch. No canned curry powder in that one! Or they get a wonderful spicy tofu dish.
Why not do a Tofurkey? It's actually pretty good, no matter what peope say about it. It's also ridiculously easy to prepare and there's no messing around with thermometers. Zap the frozen tofurkey in a microwave for 3-4 minutes (they tell you not to but this works), then bake it in the oven in a casserole with onions, carrots, potatoes and walnut oil. Shorten the cooking time by 20-30 minutes.
