Thanks so much. The potato casserole looks especially yummy. I'm just trying to figure out how to heat an area to that temperature. I'll try to see if I can somehow get the oven to work but I suspect it will be too warm. A terrarium with a suspended light bulb and small fan might work better.

What I do is heat the oven at the lowest setting while I'm preparing the potatoes, then switch it off and then stick the potato mixture in there overnight. The temperature doesn't have to stay at 50 the whole time.
Happy In Wyoming, a crock pot can also be really handy for keeping things warm while freeing up over or stove-top space. My basic crock pot has a "warm" function and won't dry things out.
Ham. Sweet potato casserole. Garlic & cheese mashed potatoes. Broccoli. Cold beet salad with tangerines, feta and vinagrette. Possibly also stuffed Portabello mushrooms.
We celebrate and open presents on Christmas Eve and it includes a service at the chapel. Later in the evening we will have with family and in-laws....
Smoked salmon,decorated Caviar deviled eggs,also a Caviar pie and Russian Beluga Caviar. Aside we will have thin sliced French baguette,Kavli Thin Crispbread and to drink Moët & Chandon Dom Perignon White Gold and Freixenet Cordon Negro Brut. All evening we have variety of cheeses and crackers,my home baked 14 varieties of Christmas cookies and a Baumkuchen and coffee at hand.

Honestly i'm not sure yet but whatever it is certainly wont be home cooked. Since this is our first year away from where we grew up, our family will have to come here so we wont be having mommas cookin, except I did talk her into bringing her red velvet cake. Odds are we are probably going to be going to some sort of restaurant for both Christmas Eve and Christmas day, what ones? I have no idea yet, realy haven't planned that far in advance.
due to family logistics, the clan is celebrating the weekend after, so I'll be joining with friends in a traditional Jewish Christmas -- chinese food & a movie!
We ordered a pork roast. Compromise from no turkey, no beef...no fish...only vegan...this family is difficult to please. Everything else will be vegan.
As I am in Mexico City this year for Christmas, I will probably have what many locals here eat at Christmas--"lomo de cerdo relleno navideño " -- a roasted pork loin stuffed with almonds & pecans, and various dried fruits. The recipe varies from region to region, I am told. I saw the stuffed loin at the store today---oven ready! Should be pretty easy---just roast and serve. I will also roast some whole small potatoes with butter & parsley, make a big green salad, fry up some "empanadas de espinaca" (spinach empanadas), warm tortillas & hot salsas on the side, and some Rompope (spiked vanilla eggnog) and hot "ponche" to drink. That'll just about do it for me (and my guests) this year.
