Most of the books that I have seen on easy meals to make have recipes that call for exotic cheeses and spices and things that arn't normally in the kitchen and those things once bought will only be used once or once in a great while. For instance some recipes might call for Arborio rice and/or cummin powder and/or white pepper and/or brown mustard and/or dried thyme and/or bay leaf etc. You get the point I am making. I can't go out and run around looking for some of that stuff to make one meal and then have to possibly put it in the oven for 45 minutes etc. I cook for myself only and need something super simple like boiling noodles and mixing it with meat balls and some spagetti sauce and a few other things and it works and tastes great. Simple stuff. I need more recipes like that and preferably a book that has a lot of those simple recipes.

Better Homes & Gardens New Cookbook has a variety of simple recipes also on the Better Homes and Gardens - Home Decorating, Remodeling and Design Ideas, Gardening, Recipes site look up simple recipes.
