It is a dreary day here, too. Hubby is working, but I'm making a meatloaf anyway, with baked potato and corn. He'll enjoy the leftovers tomorrow.

A non-fat Pineapple Greek yogurt, 2 light whole wheat toasted slices of bread with healthy margarine and strawberry jam and a large mug of organic chamomile tea with a teaspoon of sugar.

I've been being hounded from all for lasagna so I assembled a wild mushroom and spinach lasagna today. It's in the oven now.

Escarole salad with red onions and canalini beans.

Lemon pie for desert.

Warm Giardelli chocolate brownies and Nathan's hot dogs with homemade slow cooked coney sauce. On a hot dog kick for some reason this week. The brownies are a special treat since we are snowed in here in SC.

I add diced sweet relish to the coney sauce for a little kick.
