I'm doing the mini chicken pot pies tonight - cooking up some frozen mixed veggies, and fresh chicken. I line muffin pans with Grand Biscuits and fill them with the chicken/veggie mix. Bake about 20 minutes or until biscuits are golden brown.

Good day

Tonight we have "Cream of Red Bell Pepper Soup" with home baked little caraway buns and for dessert sliced oranges with shredded coconut and a sprinkle of vanilla sugar.

2 Tbsp butter
2 cups fine cut onions
2 cloves diced cloves
salt/black pepper to taste
1/2 tsp cumin
5 sliced red bell peppers
1 tbsp white flour
1/2 cup vegetable bouillon or water
2 1/2 cups milk
sour cream,fresh cilantro/coriander and fresh or dried basil leaves for decoration

In a pot melt butter,add onions,garlic and fry slowly with salt,black pepper and cumin.When onions are soft add red bell peppers,stir and cover and cook for 15 minutes,stirring at times gently.Next add flour,cook and stir til no lumps left for another 5 minutes roughish. Now you add bouillon/water,cover and cook for 3 more minutes. Remove from heat and add room temperature milk and use a puree hand blender to blend smoothly the soup.Heat gently on low heat and serve with smooth sour creme,basil and cilantro.With my home baked little caraway buns I serve basil butter.(that I mixed before together)

Yesterday's pork loin with stone ground mustard off the bbq rotisserie was delicious. Oven fried potato wedges with fresh sage. Maybe just sandwiches and a good cold beer.

We are having sauteed beef, onion, bell pepper, mushrooms over egg noodles.

Of course there will be a lot of spice added to the sautee, and a wine sauce made.

I am making Japanese style curry beef with onion, sweet potato, served over short grain rice. We love this meal.

I am using stew meat today.....so I cut it in small pieces and have it simmering for a couple of hours to tenderize it
I am using the Gold's curry roux....it is used in most Japanese homes and my DP likes it at least as well as when I make it from scratch.

Farmers market this afternoon so I will get some fresh veggies.....but need to use up what I have on hand so I mustn't let all that fresh goodness seduce me into over shopping!
