A non-fat cherry-pomegranate Greek yogurt, 3 toasted whole wheat slices of bread with healthy-style margarine and strawberry spread and a large mug of tea with a teaspoon of sugar and a bit of skim milk.

Blackened chicken breasts on the grill (let em cool) and served sliced in a big romaine salad with the fixings..

Chipotle hummus sand which on a crusty multi grain roll, stuffed with sliced tomatoes, avocados, roasted artichoke hearts, sliced onion and sliced dill pickle. My daughter adds provolone cheese and more peppers.

Red skin potato salad with a light Balsamic vinegar dressing.

Served with a cold Stella for the older folks. Lemon water for everyone else.

Strawberries and cantaloup for desert.

White chicken enchiladas in green sauce (didn't have any black beans, so used cannelini beans instead). It's kinda pale but should still be good eating!

Lasagna, made with small curd cottage cheese. I know, I know, hardly authentic Italian but I have a couple of picky ones at home who HATE ricotta! Urrrghhh!

I actually got them to eat lasagna which is a milestone in itself, as they HATE mozzarella too, but I get the deli counter to slice the mozzarella really thin and I make sure I drain the cottage cheese, too so the picky ones have no complaints.

Sometimes, it's so hard to make a meal and please EVERYBODY! Not like when I was a kid, you ate what Mama made or you didn't eat at all, lol

Mostly deli dinner: Bacon & bleu cheese potato salad and chicken wings. Steamed broccoli, zucchini and cauliflower for the vegetable.
