We have left over roast and lots of juice, so it is French dip sandwiches for us. I am doing a carrot and raison salad as well.

nmnita what flavors do you use for your carrot salad? I put also shredded apple in my carrot and raisin salad

I am going to try my hand at szechuan beef, a side of pan fried tofu (not sure of dipping sauce yet), a salad, and pumpkin bread pudding.

Nope.... I'm making mongolian beef.

Tonight is breaded chicken tenders, creamed spinach ( homemade) and coleslaw (homemade), tomorrow night is the pig roast at my friends and with that we will have homemade coleslaw, macaroni salad, baked beans, tossed salad, homemade BBQ sauce and for dessert a silk and satin cake that I bought at this fine bakery by me.

Making the empanizado (cuban crackers coated fried chicken) tonight with garbanzo/rice and an avocado salad. Was excited to find my REAL chorizo and mak\de some fritas mixture tonight. (Cuban burgers) Formed the patties and will let them marinate overnight. They will be grilled for dinner tomorrow along with shoestring fries and a "special" sauce. Will serve yuca fries alongside and something veggies/salad.

Also got a giant pork butt that Aldi had on sale. Will cut that in half, store half for another meal later this month. I will make the other half in the crockpot overnight. Freeze tomorrow morning so it can be thawed on the day after tomorrow and cooked again. (It's a long complicated but delicious recipe)

We had leftover gravy frozen with pork..so defrosted it today and having some Barilla ziti with gravy and pork..
Italian night here! With some fresh Italian bread for dipping..
