Got stuck in gridlock tonight (or as I texted a friend "grudlock"). Ended up ordering Greek salad & Greek pizza from the local joint and glad to do it.
Anyway, someone (maybe it was no kudzu) posted a recipe for chicken thighs with apricot jam and some other ingredients, so far the jury is still out as it is all still cooking. So, that's what is for dinner tonight...eventually.

First things first, IT was absolutely delicious, and...the recipe was actually posted by runswithscissors, really a treat; thanks rws!
3 pieces of fried chicken with brown rice, along with a small spinach salad. Sweet iced tea to drink.
Yum.
Spent way too long making dinner (prep time on recipe 10 mins, actual time 70 minutes): salmon burgers (diced) with yogurt/dill sauce and a wedge salad. Family gave it five outta ten stars. Not making that again.
Yes, just like you make a grill ham and cheese but instead of the ham, you use leftover spaghetti and meatballs in my case. I tried to post a pic but couldn't get it to work. But, you can type it in google and click on images and some mouth watering pics will come up.
Spaghetti and meat sauce, green salad and garlic toast. Water with lemon to drink.
