Today I'm making one of my Dad's favorites. Pork chops and sauerkraut in the crock pot with mashed potatoes. For dessert warm vanilla pudding (cook and serve) topped with fruit cocktail. Ice tea to drink. SOA tonight! It's getting soooo good!!!

Good morning everyone After 10 days of eating nothing but Gurdwara food and sipping daily Indian masala tea I am craving for pizza tonight. So we are having a vegetarian and also a pepperoni pizza made with Durum flour and flax seeds, tomato sauce, onions, olives, peppers, mushrooms, garlic and old Canadian cheddar cheese. With it a mixed garden salad. To drink a beer. For dessert green grapes.

Mmmmm......I like the onion idea. I will have to add next time. Thanks!

Tonight's dinner for me and the kids is fried catfish with hush puppies and cole slaw. My husband doesn't like catfish, I know crazy right, so I will fry some chicken drumsticks up for him.

Pot roast with onion/garlic/mellow peppers/carrots/celery went into the crock pot last night; stone ground mustard and two bottles of Guinness Stout. Corn, the (hopefully!) last yard long beans, mashed potatoes; cookies, dried fruit, nuts.

Since my kids are off at school, it's going to be last night's leftover pot roast tonight.

You are having one of my all time favorite leftovers! Hope you enjoyed it!

Whenever I have leftovers like this, pasta with tomato sauce and meatballs I get my old trusty cast iron skillet and put just a little olive oil in the pan, not too much, but enough to lightly coat the bottom of the pan. Get it good and hot, but not smoking. Throw in some hot chili pepper flakes and let that infuse a bit.

Throw in the spaghetti and meatballs and stir fry them, let them sizzle and toss them around, coating them with the little bit of olive oil and the pepper flakes. Sometimes, I even fry long enough to make crispy bits on the pasta. Oh yes!

Blessings!
