I'll be using the last of the ham I found in the freezer in a rice and broccoli (also found in freezer) casserole. I will make it this morning and put in fridge cause I have a rather unpleasant doctor's appointment which puts me away for the rest of the day.
I'm trying to empty the freezer in anticipation of holiday cooking and freezing. Finding all sorts of forgotten treasures.

Pan fried potatoes (tiny raw cubes and patience), steamed cabbage, left over pork roast. It is gray and rainy. Comfort food day.

Roasted chicken, quickie stuffing, and probably green beans. If DH is a really good boy, I might make some gravy.

It's a cold, rainy day here. Beef/ pork meatloaf topped with Italian tomato paste, brown gravy. Roasted potatoes and fresh spinach. A warm fire in the fireplace! Ice tea to drink. Warm cherry crumb cobbler with vanilla ice cream.

I was reading the "grits" thread and I got an urge for an old favorite that we haven't had for a while. Chesese Grits Casserole. I use an extra sharp and crumbly cheddar. I'm making a pot of kale and chard with vegetable broth. Some dill pickle potato salad. And lots of hot sauce.

pumpkin spice cake for desert.
