I found an amazing butcher shop in Richmond today. It had come highly recommend to me from several people. (Belmont Buchery in Carytown). Not only did I order my Thanksgiving turkey (free range, organic), I had them slice some of their home cured and smoked bacon, and then I bought some of their shop ground veal/pork/beef mix.

With that mixture I made some really good meatballs with parmesan, fresh basil, parsley, grated onion, two egg yolks and some selzer for moisture and lightness. and added bit of fennel. Browned those up and made some tomato sauce with lots of garlic, parsley and oregano. Threw in the meatballs and cooked up some nice spaghetti.

I will freeze most of the meatballs and sauce....will come in very handy around the holidays. I love cooking!!!!!!
