Having finally finished the last of the Christmas ham, I am in the mood for a little seafood. Since I got a ravioli maker for Christmas, I decided to make:
Homemade shrimp-stuffed ravioli and zucchini in a garlic cream sauce
Caesar salad and garlic bread and
Cheesecake brownie squares for dessert.

Spaghetti with sardine sauce. Marco Polo brought spaghetti to Italy before Columbus brought tomatoes, so in the interim, Italians usually ate pasta with sardines, which were abundant in the Mediterranean. However, I cheat and put canned sardines in tomato sauce. My sauce is made from two onions and a green poblano pepper pureed in a blender with enough water to puree, and then simmered with a can of tomato pate. No salt, no sugar. Italian seasoning and the oil from the sardine can. Even kids love it, and have no idea it is good for them.
Looks like son and family are eating out and hubby is working, so little old me will just scrounge for something. We have all sorts of leftovers.
