A leftover concoction to make dinner tonight. Used the Christmas cornish hen to make a stock. Leftovers from the freezer: corn & tomato salad, baked chicken breast = chicken corn chowder. I just need to saute some zucchini, carrots, onions and celery, chop some potatoes and throw it all together with some seasonings, milk (don't have any cream) and there is dinner. I'll have the chowder with an onion & poppy seed roll.

I think we're going to have venison meatloaf. My wife takes a few long green peppers and stuffs them with cheese and kinds puts them in the middle of the loaf so it bakes in. Makes the meat a little moister with a little cheese and pepper in there.

It's cold so I think we will have that and some good old fashioned mashed potatoes. It was -17 last night, forcast to be the same tonight.

The tamales are steaming on the stove. My brother wanted to make these and they are so much easier with more than person assembling them.

A peach non-fat Greek yogurt, 2 toasted slices of whole wheat bread with salmon cream cheese spread and a mug of tea with a teaspoon of sugar & a bit of skim milk.

It's the 30th of the month, so we're off to 30 cent night at our social club. 30 cent selected drinks at the bar, 30 cent food items. I'm definitely ready for a couple of those 30 cent drinks.

Smoked salmon, new potatoes, boiled and swirled with fresh flat parsley, dill and whipped butter, a cucumber and onion salad with a creamy sour cream and dill based dressing.

Lots of fresh rye bread, Wasa crackers and pickled herring. Gjetost (Norwegian cheese) and Jarlsberg for the less adventurous. Lingonberry jam.

Norwegian spice cake for desert. Akavit or lemonade. Caraway Vodka. Can't think of the brand. My friends are bringing that.
