Think goodness that I am not limited to only three and I am going second Romanigypsy that ethnic would not include standard American fare since it would wipe out one of my choices but these would be mine

Peruvian (a lot of Asian influences would help with missing those flavors)
I would have included your choices too plus Turkish.
Mexican, Japanese (only for the sushi and seafood) and Middle Eastern (only for the hummus)... Although if I could just make the hummus myself, I'd rather have Thai.
